"I wanted to honor them as I grow this restaurant, just as they've inspired me in my other ventures." His journey to Caffè Allor began during a honeymoon in Siena, Tuscany, where the timeless streets and architecture captivated him. He instantly knew he wanted to bring a piece of that Italian charm back home.

Mark, no stranger to the world of taste and flavor, already supplies premium ingredients to food-service businesses. This expertise ignited his desire to reinterpret the dishes he and his wife cherished during their Italian escapade. With a passion for promoting Filipino ingredients locally and with sights set on global reach, he saw the unique opportunity to showcase the richness of Filipino cuisine within an elegant Italian setting.

For those eager to explore the Filipino side of the menu, the Mango Sinigang is a must-try – a delightful twist on the traditional sour soup, elevated with crispy pork and sweet ripe mango. The Golden Egg Waffle, Caffè Allor Ristorante’s luxurious take on "kwek-kwek" adorned with edible gold, is a playful yet elegant surprise.
